This easy meal comes together with a little help from your air fryer and ingredients you already have on hand. Canned tuna gets a serious upgrade when it’s paired with staple seasonings and herbs. Cooking them in the air fryer allows for a crispy exterior without compromising the inside of the croquettes. These tuna croquettes taste great on their own, with a sauce, or sandwiched in a toasty bun.
Ingredients
- 4(2.6-oz.) pouches tuna in water
- 1/4 cup finely chopped celery
- 1/4 cup finely chopped scallions
- 2 tablespoons coarsely chopped green olives stuffed with pimentos
- 2 tablespoons prepared horseradish
- 1large egg, lightly beaten
- 1/4 teaspoon ground black pepper
- 1 2/3 cups panko (Japanese-style breadcrumbs), divided
- 2/3 cup mayonnaise, divided
- Cooking Spray
- 1 tablespoon Sriracha chile sauce
- 1 tablespoon Dijon mustard
- 1 teaspoon fresh lemon juice
- 1/4 teaspoon smoked paprika
How to Make It
Step 1
Stir together tuna, celery, scallions, olives, horseradish, egg, pepper, 1/3 cup of the panko, and 1/3 cup of the mayonnaise in a medium bowl to combine ingredients. Let stand 5 minutes then form into 4 equal patties. Place remaining panko in a shallow dish, and place each patty in panko, pressing to coat each side in crumbs. Set aside.
Step 2
Preheat basket of an air fryer for 10 minutes at 375°F. When preheated, spray inside of basket with cooking spray, and spray both sides of 2 tuna patties liberally with cooking spray; place in basket. Cook until hot and crispy on the outside, about 15 minutes total, turning halfway through.
Step 3
Meanwhile, stir together Sriracha, Dijon, lemon juice, paprika, and remaining mayonnaise in a small bowl. Serve croquettes with sauce, or make into a sandwich with your favorite bun and toppings.
