DIRECTIONS
1.In a large pan low-med heat, sauté onions and garlic for 5 mins until softened. Lid on speeds up process.2.Turn up heat to med, add capsicum cook for another minute.3.Add beef and cook until browned, about 2-3 minutes, breaking up the meat as it cooks.4.Add taco seasoning mix, stir into meat mixture.5.Add rice, stir for about 1 minute.6.Add black beans, corn, peas, tomatoes, stir inches.7.Cover on low-med heat cook for 10-15 mins and lower heat until ready to serve. Occasionally stir.8.To serve: If you like melted cheese add in approximately 2 minute and cover with lid on low heat.
