DIRECTIONS 1.In a large pan low-med heat, sauté onions and garlic for 5 mins until softened. Lid on speeds up process. 2.Turn up heat to med, add capsicum cook for another minute. 3.Add beef and cook until browned, about 2-3 minutes, breaking up the meat as it cooks. 4.Add taco seasoning mix, stir into meat mixture. 5.Add rice, stir for about 1 minute. 6.Add black beans, corn, peas, tomatoes, stir inches. 7.Cover on low-med heat cook for 10-15 mins and lower heat until ready to serve. Occasionally stir. 8.To serve: If you like melted cheese add in approximately 2 minute and cover with lid on low heat. And allow cheese to melt. 9.Serve with desired toppings. Optional Toppings: Grated cheese, avocado, spring onions, coriander, parsley, sour cream, Greek yogurt, cottage cheese etc. Notes:Homemade Taco Seasoning Recipe: 6g (2 tsp) Cumin, ground. 3g (1 tsp) Paprika, ground. 1/8 tsp Chili flakes, (or to taste). 1/8 tsp Cayenne pepper, (or to taste).
