2 tbsp olive oil
454g pack essential Waitrose 8 British Pork Sausages
2 green peppers, deseeded and finely sliced
3 cloves garlic, crushed
2 x 395g cans essential Waitrose Mixed Beans In A Spicy Tomato Sauce
300ml chicken stock
2 large baking potatoes, cut into 1cm dice
1. Heat the oil in a large shallow saucepan or frying pan. Add the sausages and peppers and fry very gently, stirring the ingredients for 8-10 minutes until golden.
2. Stir in the garlic, then the mixed beans, chicken stock and potatoes. Bring to a gentle simmer and cook, uncovered, for 12-15 minutes until the potatoes are tender and the juices thickened. Season to taste and serve.
