Giant cookie recipe: How to make a delicious giant cookie

While the UK is on lockdown many of us have got much more time on our hands. To pass the time away many have decided to bake their own delicious treats from scratch. But if you’re looking to make something especially spectacular, why not try making your own giant cookie at home.

Everybody loves a good old-fashioned chocolate chip cookie.

They’re a baking classic, loved by adults and children alike.

But rather than going through the hassle of separating dough batter to make a load of smaller cookies, why not save yourself the time and make one large cookie?

Premium cookware brand STAUB and MasterChef finalist Emma Spitzer have created an impressive giant pan cookie recipe for you to try at home.

The finished result serves 10 to 12 people and is not as complicated as you may think.

The cookie takes 25 to 30 minutes to cook, and it’s up to you whether you want a gooier cookie or one which is more set.

And for a top tip, the recipe lends itself perfectly to a scoop of vanilla ice cream at the end.

Ingredients (Serves 10 to 12):

125g salted butter, room temperature
150g soft light brown sugar
100g golden caster sugar
2 eggs
1 tsp vanilla extract
200g plain flour
1 tsp baking powder
¼ tsp bicarbonate of soda
250g dark chocolate, roughly chopped

First preheat your oven to 180C.

Put the butter and sugars into a bowl and beat for three to four minutes (use an electric beater if possible), until light and fluffy.

Beat in the eggs one at a time, and then add the vanilla extract.

In a separate bowl mix the flour, baking powder, bicarbonate of soda and add to the butter mixture.

Beat the mixture until just combined, then stir through the chocolate chunks.

Tip it into a 20cm ovenproof frying pan and bake for 25 to 30 minutes (25 minutes will be gooey, 30 minutes will be slightly more set).

To finish, serve with vanilla ice cream.
