Jamie Oliver showed how to make a healthy and “super simple” breakfast recipe which can be prepared in under five minutes.
“I’m told that in the UK avocados are now more popular than oranges!
“This breakfast favourite is a source of vitamin E, which acts as an antioxidant, helping to protect our cells,” he explained.
Jamie shared his own version of avocado on rye toast with ricotta.
The breakfast dish is also perfect for those looking for a quick and healthy lunch.
Ingredients
One heaped teaspoon of ricotta cheese
One x 75 g slice of rye bread
Half a ripe avocado
One ripe tomato
One lemon
One teaspoon of toasted pine nuts
One sprig of fresh basil, optional
Method
Spread the ricotta cheese over the rye bread or toast.
Finely slice the avocado and tomato, then toss with a squeeze of lemon juice.
Season to taste and arrange on the toast.
Sprinkle over the pine nuts and a few fresh baby basil leaves, if you’ve got them.
The chef also shared an alternative for salmon lovers: his own version of salmon, cucumber and avocado on toast.
Jamie posted the dish on social media and said: “More toast inspiration for you for brekkie or lunches this week…
“This is simply a bit of avo, smoked salmon, cottage cheese, cucumber, fresh chives & a little lemon juice loaded on top of a piece of rye bread. Super simple. Brilliant!!”
