This keto-friendly take on waffles is crisp and golden on the outside and fluffy on the inside—like cloud bread, but better. They work great for savory breakfast sandwiches and lunch, and have a similar flavor to French toast when some cinnamon and vanilla is added. Make and freeze a big batch of these chaffles to pop in the toaster whenever a bread craving strikes. 


  • Cooking spray
  • 1large egg
  • 1 1/4 ounces mozzarella, finely shredded (about 1/2 cup)
  • 1 teaspoon almond flour
  • 1/8 teaspoon vanilla extract, optional
  • Pinch of ground cinnamon, optional

How to Make It

Step 1

Preheat a mini waffle iron. Spray waffle iron with cooking spray. Whisk together egg, mozzarella, flour, and if using, vanilla and cinnamon, until well combined. 

Step 2

Add half of the batter to waffle iron; cook until most of the moisture has evaporated and waffle is golden brown and toasted, about 3 minutes. Repeat with remaining batter. Serve immediately.
