  • 1tablespoonextra virgin olive oil
  • 1white onion, minced
  • 2garlic cloves, minced
  • 1 12 lbsboneless skinless chicken thighs, cubed
  • 1teaspoonflour (optional)
  • 1teaspoonitalian seasoning
  • 680mltomato sauce
  • 150mlfeta cheese
  • 12 cupkalamata olive, pitted and sliced
  • 14 cupwhipping cream

    DIRECTIONS

  • In a large skillet, heat oil over medium heat and cook onion until softened.
  • Add garlic and sauté for 1 minute.
  • Push onion and garlic to the side and turn up heat to medium-high.
  • (Optional- Sprinkle a light dusting of flour over chicken to encourage browning).
  • Fry chicken until browned.
  • Sprinkle Italian seasoning over.
  • Pour in tomato sauce (3 cups or 680ml jar), I liked tomato with basil for this recipe.
  • Incorporate everything, lower heat and simmer for 10 minutes to thicken.
  • Then crumble in feta and olives (mince these for a kid-friendly dish).
  • Continue to simmer for another 10 minutes.
  • Add in cream and serve.
