Oat milk recipe: How to make oat milk

Oat milk is a simple concoction of roller oats and water blended together. With a creamy texture and subtle porridge-like flavour, oat milk is a great addition to any breakfast or hot drink. Unlike other plant-based milks which originated as early as the 13th century, oat milk is a bit more recent, having been discovered in the 1990s by Swedish scientist Richard Oste. Now, as plant-based foods and vegan diets become increasingly popular, oat milk has become one of the most popular and mainstream substitutes for cow’s milk.

How to make oat milk

This recipe from the Minimalist Baker will ensure your oat milk is perfect.

This method yields creamy oat milk every time, that is perfect for adding to coffee, matcha, cereal, oats, baked goods and more.

You can also optionally add a series of ingredients for a boost of flavour.

Sea salt, dates, vanilla extract, cocoa powder and berries all make great additions when blending.

For this recipe, you will need:

90g rolled oats
960ml water (for thicker, creamier milk, use less water)
1 pinch salt
1 whole date, pitted (options for added sweetness)
1/2 teaspoon vanilla extract (optional)
10g cacao powder for chocolate milk (optional)
25g fresh berries for berry milk (optional)


Add oats, water, salt and any optional add-ins to a high speed blender.

Top with the lid and cover with a towel to ensure the contents do not splash out.

Blend for about 30 seconds to one minute or until the mixture seems well combines.

It does not have to be 100 percent pulped, in fact, over blending can make the oat milk slimy in texture.

Scoop out a small sample to test flavour and sweetness.

If you find it is not sweet enough, add more dates to the mixture.

Pour the mixture over a large mixing bowl or pitcher covered with a very thin towel or clean t-shirt.

The Minimalist Baker recommends double-straining through a very fine towel to remove any remnants.

A nut bag is not recommended, as it lets out too much residue.

Transfer to a sealed container and refrigerate. It will keep in the fridge for up to five days, sometimes more.

Shake well and enjoy the milk cold.

It is delicious as it is, or added to cereal, smoothies or baked goods.
