The Brilliant Secret for a Better Grilled Cheese

When it comes to the perfect grilled cheese sandwich, we all want the same thing: A beautifully crispy, golden crust and a soft, gooey interior. But the secret to achieving maximum creaminess is a surprising ingredient nestled between the two slices: avocado.

You probably know from guacamole, avocado toast or maybe the occasional avocado smoothie that the creaminess of a ripe avocado can’t be beat. After mashing it with a spoon, it becomes silky, buttery, and and ideal for adding richness in any number of applications. Avocados also offer plenty of healthy fats that can cut down the amount of cheese needed in your grilled sammy (but don’t worry, you don’t have to).

Avocado has a subtle flavor that can easily be swayed savory or salty (or even sweet!) depending on what seasonings you add to it. The mild flavor also allows it to easily adopt bolder flavors like the cheddar and Gruyère in this grilled cheese.

Start by mashing a ripe avocado with the back of a spoon until it has a smooth consistency. Although the cheeses bring the salty element to this sandwich, don’t forget to lightly salt and pepper the avocado. A flavorless avocado won’t do you any favors.

Butter two slices of bread on both sides, then lay them down on a hot skillet to get a light brown crust on one side. When the crust is nice and golden, lay the slices (toasted side up) on your cutting board and layer thinly-sliced cheese on both slices of bread. We recommend using cheddar and Gruyère because they are excellent melters.

For the grand finale, spread the avocado mash on on side of the sandwich, on top of the cheese pile. Carefully fold the two sides together and return the warm sandwich to the skillet for a slow toasting on each side.

Patience gets the job done, so give your masterpiece a solid few minutes in the pan to get gooey and golden. Without that time, the avocado and cheese won’t fully meld together into one creamy and harmonious filling.
