Guys, this is probably one of THE most exciting holidays of the year (well, at least to me): Today is National Avocado Day. As if you ever needed a reason to dig into a fancy avocado toast for brekkie or use avocado in basically EVERYTHING you want to eat (hello smoothies, chocolate mousse, fries, dressings, and more…), here’s a legit reason to go green all day long without any shame.
And if anyone knows how to use avocado to highlight its amazing flavor and creaminess, it’s Ina Garten (I mean, does she ever do anything wrong?). Greek Avocado & Herb Dip
Guacamole is one the best dips you can choose for veggie crudité and chips, but this version has some extra protein from the Greek yogurt and flavor from the fresh herbs to take classic guac up a notch. Go for mint, dill, and chives, which taste great with the yogurt, and add feta cheese for more thickness and a pinch of salt.

Tomato & Avocado Salad
Talk about a light and refreshing salad for the end of summer! This tomato and avocado salad uses tomatoes when they’re still in their prime (try heirloom variety for a pop of color), along with diced avocado, onion, and lemon juice to keep it simple and clean. Add fresh pepper on top for a kick and get that big bowl ready to serve a crowd.

You can’t go wrong with classic guac to celebrate — it’s avocado in its purest form and it is super versatile, where it pairs with basically anything! (Including a margarita, which is a GREAT idea for happy hour on a Monday.) Ina’s guacamole has a bit of kick from Tabasco sauce and garlic cloves, so if you want it more mild, simply omit the sauce.
