  • 13 cupdill, chopped

    DIRECTIONS

  • Using large holes of the grater, grate cucumber over a bowl and then chop cucumber finely if needed; transfer to a fine sieve. Sprinkle kosher salt evenly and let sit for 30 minutes. Transfer cucumber in a cheese cloth and squeezing out excess water; set aside.
  • In a bowl, combine yogurt, lemon juice, garlic, dill and pepper. Add the strained cucumber and mix well. Taste and adjust seasoning, if needed. Refrigerate for 2 hours or overnight. Just before serving, sprinkle a little more fresh chopped basil on top.
