Vegan Fried Rice


  • 1 teaspoon olive oil
  • 1 ½ cups cooked white rice, warmed
  • ¼ cup soy sauce
  • 1 teaspoon sesame oil
  • 1onion, diced
  • 1red bell pepper, diced
  • 4mushrooms, sliced
  • 3green onions, diced
  • Directions

  • Step 1

    Heat olive oil in a large skillet over medium-high heat. Add rice; cook and stir until heated through, 2 to 3 minutes. Stir in soy sauce and sesame oil. Add onion, red bell pepper, mushrooms, and green onions; cook and stir until tender, 5 to 10 minutes.


  • Cook's Note:

    Scrambling an egg with soy sauce in the pan beforehand adds a wonderful texture if you’re not vegan. Or you could try tossing in some diced chicken. Also, you may want to put in some more soy sauce.
