DIRECTIONS Cut cream cheese into small (1/2 ounce) cubes. Heat oil on medium heat. Add shallots, then spinach. Wilt spinach for 4-5 mins, stirring or tunrning frequently to allow all leaves to cook down. Pour off any excess liquid, then reduce heat to medium-low.
