Courgette & spicy houmous pittas

    Ingredients

    1 essential Waitrose courgette, coarsely grated
    100g essential Waitrose houmous
    1 tsp chill flakes
    25g pine nuts, toasted
    2 essential Waitrose wholemeal pittas, toasted
    1 essential Waitrose little gem lettuce, shredded

    Method

    1. Place the grated courgette in a small bowl, cover with clingfilm and microwave on high for 1 minute. Stir in the houmous and pine nuts, and sprinkle over the chilli flakes.

    2. Split open the toasted pittas, and place the shredded lettuce in the bottom. Top with the courgette mixture, and serve with extra salad.
