Zest and juice 1 lime
2 cloves garlic, finely chopped
330g pack essential Waitrose British Chicken Breast Chunks
1 essential Waitrose Cauliflower, cut into small florets
1 onion, sliced
1 red pepper, sliced
25g pack chives, chopped
2 tbsp mixed seeds
1 tbsp Kalamata olive & sun-dried tomato tapenade
1 tbsp extra virgin olive oil
1. Preheat the oven to 200°C, gas mark 6. Mix together the lime zest, juice and garlic and add the chicken (cut any large pieces in half). Set aside.
2. Place the cauliflower, onion, pepper, chives and seeds on a large baking tray and toss in the tapenade and oil. Roast for 20 minutes or until tender.
3. Meanwhile, thread the chicken onto 4 skewers and place under a preheated grill for 12-15 minutes, turning occasionally or until cooked through with no pink meat. Serve the kebabs with the cauliflower.
