Pork with apricots & lentils

    1 tbsp olive oil
    2 pork loin steaks, trimmed
    250ml Cooks’ Ingredients Chicken Stock
    75g dried apricots, halved
    400g can lentils, drained and rinsed
    2 tsp wholegrain mustard
    2 sprigs thyme
    1 tbsp thyme leaves


    1. Heat the oil in a pan and fry the steaks for 4-5 minutes, turning once. Add the rest of the ingredients, except the thyme leaves, and cover. Simmer for 15 minutes, stirring occasionally, until the pork is cooked through with no pink meat. Remove the thyme.

    2. Season, sprinkle with thyme leaves and serve
    with green beans.
