Cabbage is an amazingly versatile vegetable. It adds crunch to wraps or sandwiches when raw and thinly sliced. You can marinate it and make a creamy slaw. It has a delicate flavor naturally, but it can take up a lot of seasoning when you cook it. And if you sauté it until it’s translucent and silky, that healthful, leafy vegetable melts in your mouth almost like pasta noodles.
This simple stir-fry is one of the easiest ways to use a lot of cabbage all at once. It’s just stir-fried chicken tossed with a ton of cabbage that’s been sautéed in butter with onions and garlic. It could not be easier, and the grocery shopping list is practically nonexistent. The whole recipe only calls for chicken, cabbage, onion, garlic, butter, salt and pepper, and a little bit of paprika.
You can use chunks of chicken breast or thigh, depending on your preference. Thighs are juicier and less likely to dry out, but chicken breasts work great too — they just take a bit of watching to make sure they don’t overcook. Toss the pieces in a pan with some olive oil, sprinkle them with salt and pepper, and take them out of the pan as soon as they’re cooked through.
Use the same pan to cook the cabbage with butter and onion. When the cabbage is nice and soft, add fresh garlic and some mild paprika. Put the chicken back in the pan and stir everything together. Once the chicken is hot, it’s ready to serve immediately.
