Homemade Tomato Soup (Low Carb)

  • 8ounces canned tomato sauce
  • 1cupchicken or 1 cupvegetable stock
  • 1mediumonion, diced
  • 1tablespoongarlic, minced
  • 14 cupparmesan cheese
  • 1pinchitalian seasoning
  • 2tablespoonsbutter or 2 tablespoonsghee
  • 1tablespoonolive oil or 1 tablespoonavocado oil
  • red pepper flakes, heavy cream -(optional)

    DIRECTIONS

  • Add butter and oil to a pan.
  • Add in minced onion and saute until soft and translucent, about 5 minutes.
  • Add mined garlic and cook one minute or until fragrant.
  • Add canned tomatoes, tomato sauce, stock, Parmesan cheese and any desired seasonings.
  • Bring toa boil, reduce to a simmer for 20 minutes.
  • Blend with immersion or standard blender until desired consistency has been reached.
  • Finish with heavy cream, if desied.
