Leftover Potato Pancakes

  • 2cups of leftover mashed potatoes
  • 1largeegg
  • 14 cupall-purpose flour
  • 2 -3tablespoonsbacon grease or 2 -3 tablespoonsother oil

  • Mix the potatoes, egg, and flour in a bowl — it will be much firmer than regular pancakes.
  • Heat your pan with the grease or oil, then begin spooning batter once it’s good and warm.
  • Flip until browned on both sides and enjoy with syrup, apple sauce, or butter.
