  • 1 12 lbsground beef
  • 1 (1 1/4 ounce) package taco seasoning
  • 12 cupwater
  • 1 (15ounce) can corn, drained
  • 1 (15ounce) can stewed tomatoes
  • 12 cupgreen pepper, . (or Black Beans) (optional)
  • 12 cup grated cheese
  • 1 (8 5/8 ounce) package Jiffy corn muffin mix
  • 14 cup melted margarine or 14 cupbutter
  • Directions

  • Brown meat, drain.
  • Stir in next 4 (or 5) ingredients, bring to a boil.
  • Pour into 2 qt casserole.
  • Sprinkle with the cheese, then cover the meat & cheese with the dry muffin mix.
  • Drizzle with melted butter.
  • Bake uncovered @ 400 for 20 – 30 minutes.
