Jerk Chicken and Rice with Kidney Beans

Jamaican food,i really love it. And also i cooked it just simple cos i used instant Jamaican jerk marinade but the taste is really great, but sad i couldnt find this jerk marinade in Hongkong 🙁

Ingredients

  1. Jerk Chicken
  2. Chicken Breast
  3. Instant Jamaican jerk marinade (will be shown in the picture bellow)
  4. Rice with Kidney Beans
  5. 2 cups rice
  6. 400 g coconut milk
  7. 1 onion,chopped
  8. 2 large thyme springs (option)
  9. 2 cloves garlic, finely chopped
  10. 1 tsp ground all spice
  11. 1 can kidney beans, drained
  12. To taste ginger, chopped
  13. To taste chicken powder or salt
  14. 300 ml cold water

Steps

  1. Marinade chicken with Jamaican Jerk marinade and cover and leave it for an hour or depending on when you will cook it. This is my jerk marinade

  2. When you are getting ready to cook, heat oven to 180C/160C. Put the chicken pieces in a roasting tin with the halved lime and cook for 45 mins until tender and cooked through.

  3. While the chicken is cooking, prepare the rice. Rinse the rice in plenty of cold water, then put it into the pan. Add the coconut milk, onions, thyme sprigs, garlic and ground allspice,ginger
    Season with salt or chicken powder, add 300ml cold water and set over a high heat. Once the rice begins to boil, turn it down to a medium heat, cover and cook for 10 mins. Add the kidney beans to the rice, then cover with a lid. Leave off the heat for 5 mins until all the liquid is absorbed.

  4. Squeeze the roasted lime over the chicken and serve with the rice, also u can serve it with hot pepper sauce if u wanna more spicy,, i like spicy so i served wt it, and this is nom nommmm 🙂
