After my wife and I went to Jamaica a few years ago I just had to give this a try, I think it’s pretty close, but I would encourage anyone to experiment by adjusting amounts to your taste
Ingredients
- 1/4 cup sugar
- 2 Tablespoons dried thyme
- 2 Tablespoons ground allspice
- 1 Tablespoon ground black pepper
- 1 1/2 tsp salt
- 1 1/2 tsp ground red pepper
- 1 1/2 tsp ground nutmeg
- 3/4 tsp ground cloves
Steps
Combine all ingredients and store in an airtight container
This rub is great on most any grilled items, recipe makes enough for 3 lbs of poultry, pork, or seafood
Also you can blend in into ketchup to baste while grilling
