Jerk Seasoning

After my wife and I went to Jamaica a few years ago I just had to give this a try, I think it’s pretty close, but I would encourage anyone to experiment by adjusting amounts to your taste


  1. 1/4 cup sugar
  2. 2 Tablespoons dried thyme
  3. 2 Tablespoons ground allspice
  4. 1 Tablespoon ground black pepper
  5. 1 1/2 tsp salt
  6. 1 1/2 tsp ground red pepper
  7. 1 1/2 tsp ground nutmeg
  8. 3/4 tsp ground cloves


  1. Combine all ingredients and store in an airtight container

  2. This rub is great on most any grilled items, recipe makes enough for 3 lbs of poultry, pork, or seafood

  3. Also you can blend in into ketchup to baste while grilling
