2tablespoonssherry wine (optional)
1cupbeef or 1 cupchicken broth
3cupsmilk or 3 cupshalf-and-half
1teaspoonsalt
1⁄2teaspoonpepper

DIRECTIONS
Melt butter in 2 qt saucepan. Saute onion and garlic.Add flour and whisk until flour is incorporated and no lumps remain.Add wine and sherry and cook until incorporated. Add salt and pepper.Depending on the recipe I add mushrooms or broccoli and other seasonings, such as oregano, basil, nutmeg, curry powder etc. To taste.
Add 3 cups milk or half and half and simmer until thickened.
