Oven-Baked Glazed Tex-Mex Ribs

    DIRECTIONS

  • Preheat oven to 350 degrees.Line a large roasting pan with foil; place ribs in pan.
  • Grate 1/2 t. zest from the lime into a bowl; reserve.Cut lime in half and squeeze juice over both sides of ribs.Take the lime halves and rub the ribs over both sides.
  • Combine chili powder, salt, chile pepper, cinnamon, and pepper.Stir 1 t. spice mix into zest and reserve.Rub remaining spice mix over both sides or ribs.Cover pan tightly with foil and roast for 1 hour and 30 minutes.
  • Stir jelly into reserved spice mixture.Remove foil from ribs; brush with some of the jelly mixture.Roast uncovered 30 minutes or until very tender, brushing every 10 minutes with remaining jelly mixture.
