1. 1 cup warm milk/yogurt [200ml]
  2. 1 cup warm water [200ml]
  3. 1 cup oil [200ml]
  4. 2 egg white [save the yolk for glazing]
  5. 4 tbsp sugar
  6. 1 tsp salt
  7. 1 packet instant yeast [1.5 tsp]
  8. 6-7 cups flour [1200-1400ml]
  9. 1/2 tsp mahlep [optional]


  1. Mix all the wet ingredients first

  2. Then add the dry ingredients

  3. Add in the flour slowly slowly to create a smooth earlobe texture dough

  4. Rest overnight or atleast 1-1.5 hrs

  5. Create 20-25 dough balls

  6. You can add filling inside the dough for flavour or keep it simple and plain

  7. Place the balls on a baking tray leaving a bit of space to let the dough rise when cooking

  8. Lightly spread the egg yolk milk on top of the dough balls. Add sesame seeds if preferred for flavour

  9. Rest the dough for about 30-40 mins or 15-25 mins in a 50° oven if in a rush

  10. Bake the poğaça in a preheated 180-200°C oven for about 15-25 mins till it rises and the top is cooked.
