Pre-Race Pasta Salad

This recipe is great on it’s own but can be paired with a protein like chicken breast, lean beef, or even fish


  1. 2 boxes rainbow rotini pasta
  2. 1 1/2 cups spinach, packed
  3. 1 can black or kidney beans
  4. 1 can corn
  5. 3 medium sized tomatoes
  6. 3/4 cup plain greek yogurt
  7. 2 tsp cumin powder
  8. Salt (to taste)


  1. Start to cook your pasta according to package directions

  2. When the pasta water is boiling, add the spinach into the water

  3. After the pasta finishes cooking drain and set aside

  4. Dice tomatoes

  5. Add the yogurt to the pasta and mix until evenly coated

  6. Add the beans, corn, and tomatoes, cumin, and salt and mix until evenly distributed
