I am on the hunt for simple, healthy family recipes that I can share with my one year old. When I saw this gem from no.cow.chow.blw on Instagram I knew I just had to try it. It’s so simple that I’m sure it will become one of my staples!!
Note – I used short crust pastry with this but it is supposed to be puff pastry. I just couldn’t get my hands on any.
Ingredients
- Ready made puff/short crust pastry
- Pesto (2 tbsp)
- 1/2 side of salmon
- Asparagus
Steps
Roll out the pastry and lay the salmon in the middle. Make sure there is enough pastry on each side to perform the wrap.
Spread the pesto over the top of the salmon and lay the asparagus on top.
Cut diagonal strips into the pastry either side of the salmon and plait it over the top.
Pop in the oven for 20 minutes (180C) until golden brown
Serve with veggies etc. This plate looks a bit beige but it was yummy.
