Salsa Verde, Green Salsa

Latin American flavors were a influential part of my youth. Growing up eating food in Florida you get the taste of quite a large melting pot of cultures from all over the world. Here is a delicious recipe under the influence of Mexican American.

Ingredients

  1. 12 ounces tomatillos
  2. 1/2 medium onion diced
  3. 4 teaspoons minced garlic
  4. 1 cup cilantro
  5. 2 teaspoons lime juice
  6. 1 tablespoon peanut oil
  7. To taste salt
  8. 1 tablespoon diced jalapeno peppers optional
  9. 1 cup water

Steps

  1. Add the oil to the pan fry the onion and garlic. Till onions are soft.

  2. Cut the tomatillos in half add to the onions. Sauté for 7 minutes add the cilantro and lime juice.

  3. Add water and boil for 20-25 minutes. Add peppers here if using. Stirring occasionally. Turn off heat for 10 minutes.
