Spatchcock chicken

Ingredients

  1. 1 whole roasting chicken
  2. Rub
  3. 2 tbsp garlic powder
  4. 2 tbsp coarse pepper
  5. 1 tbsp onion powder
  6. 2 tbsp oregano
  7. 1 tbsp thyme
  8. 4 tbsp old bay
  9. 1 tsp cayenne pepper

Steps

  1. Preheat bbq

  2. Prepare chicken by cutting out backbone and flattening

  3. Put spices in bowl and mix them together

  4. Lift skin on chicken and place rub under skin

  5. Smooth skin out on chicken and place remaining rub on top of skin

  6. Place chicken skin side up on grill for 15-20 mins. Flip chicken to crisp skin then place on indirect heat till done
