Stewed Fruit

A quick dessert. Dover style.

Ingredients

  1. Fruit
  2. 2 large Fuji apple
  3. 2 large pears
  4. 2 large peaches
  5. Body
  6. 1 stick butter
  7. 1 teaspoon vanilla extract
  8. 1 cup peach brandy
  9. 1/2 cup heavy cream
  10. 1 pinch saffron threads
  11. Spices
  12. 1/2 cup brown sugar
  13. 1/2 teaspoon kosher salt
  14. 1/2 teaspoon ground ginger
  15. 1 teaspoon ground cinnamon
  16. Topping
  17. 2 tablespoons honey
  18. 1 cup pecans
  19. 2 pinches kosher salt
  20. 1/2 teaspoon ground cinnamon
  21. 1/2 teaspoon orange liqueur
  22. Garnish
  23. To taste fresh chopped mint leaves

Steps

  1. Peel the peaches, pears, and apples. Remove the pits and cores.

  2. Slice all the fruits into wedges.

  3. Melt the butter add the saffron, sugar, cinnamon, ginger, and salt.

  4. Add the wedges to the pan. Sauté for 15 minutes.

  5. Add the brandy and cream. Let thicken.

  6. Heat a pan add the pecans and toast 1 minute. Add the rest of the topping ingredients. Sauté for 2 minutes till all the pecans are coated. These will turn hard.

  7. Add the topping an garnish to the stewed fruit serve I hope you enjoy!!
