Take them out of the tins by loosening the sides of the cake with a knife.<\/li>\n<li>Set the cakes aside by placing them on a cooling rack for now and prepare the icing.<\/li>\n<li>To make the icing, place a saucepan on the stove on medium heat and pour in the double cream.<\/li>\n<li>When the cream is simmering, remove from the heat and add in your dark chocolate. Stir well until the chocolate has melted and you have a smooth chocolate mixture. Set aside to cool for now.<\/li>\n<li>Spread apricot jam on top of each cake half, and then add some of your chocolate icing mixture once it has cooled down. \u2018<\/li>\n<li>Sandwich the cakes together and add the rest of the chocolate icing on top.
