Cocktail sausage casserole recipe is ‘perfect’ for simple winter dinner

There is nothing better than something hearty and rich for dinner during the wintertime, especially if you can easily create something delicious by tossing some ingredients into a slow cooker.

Sausage casserole is a classic midweek dinner as not only is it a comfort food, but is delicious with its rich broth and flavorful sausages which have been stewed to perfection and served with buttery mush or crusty bread.

This recipe calls for the use of a slow cooker, but you could just as easily bake it in the oven in a casserole dish for around 40 minutes to an hour.

Nathan Anthony, a cook and recipe developer known for his easy slow cooker meals, has said his sausage casserole is the “perfect” family recipe during the winter.

In a video online, Natahn said: “This slow-cooker cocktail sausage casserole is the only recipe that you need to come home to during the colder months after a long day’s work.”

How to make sausage casserole

Ingredients 

  • 500g of cocktail sausages (17.6 ounces)
  • 750g of baby potatoes (1.6 pounds)
  • 150ml of red wine (5 fl oz)
  • 450ml of beef stock (15,8 fl oz)
  • One can of chopped tomatoes
  • One onion
  • Four garlic cloves
  • Two tablespoons of tomato puree
  • One or two tablespoons of cornflour or gravy granules
  • One tablespoon of Worcestershire sauce
  • One tablespoon of oregano
  • One or two tablespoons of paprika
  • Two bay leaves
  • Handful of fresh thyme

Kitchen essentials:

  • Frying pan
  • Slow cooker

Serving suggestions: 

  • Buttery mash potatoes
  • Crusty bread with butter

Instructions 

To begin, cook the garlic in a hot pan for a few minutes, and take it up once it begins to soften. Add it to your slow cooker.

Place the sausages in the same pan and fry for one to two minutes until they brown, take them out, and add them to the slow cooker. Make sure to get them a good color as they will not get any browner in the slow cooker.

Put your puree in the pan alongside your beef stock and some boiling water. Stir it around to make sure the water picks up every bit of flavor. Then tip it into your slow cooker.

Chop your potatoes into halves and then add to your slow cooker, making sure to keep the potato skins on.

Add the rest of the ingredients to the slow cooker one at a time. Make sure not to add any salt to the casserole until it is done cooking in the slow cooker, as it can turn out too salty alongside your stock.

Cook in the slow cooker for four hours on high or eight hours on a low setting.

If using an oven instead, place it in a casserole dish and place it in the oven for around 40 minutes to an hour, but keep a careful watch on it so it does not burn.

Your sausage will be stewed to perfection once the time is up and should be around 636 calories per serving. Make sure to take the thyme and bay leaves out before serving.

This recipe is best served with buttery mashed potatoes, which can easily be cooked up in minutes if following the right recipe.
